My Go-To Savoury Breakfast: Chicken Zucchini Patties
Ingredients:
1kg organic chicken mince
1 large grated zucchini
1 large grated carrot
2 diced spring onions
2tbsp grated fresh ginger (yes it must be fresh this is the burst of flavour)
2tsps turmeric powder
a good amount of salt & pepper
Salt and pepper to taste
Instructions:
Preheat oven to 180 degrees, and line tray with baking paper
Prep the Veggies: Grate the zucchini and squeeze out excess water using a paper towel. Chop the spring onions.
Mix Ingredients: In a large bowl, combine the chicken mince, grated zucchini, spring onions, turmeric, ginger, salt, and pepper. Mix until well combined.
Shape Patties: Form the mixture into small patties.
Cook: Cook in hot oven for about 25minutes or until cooked through.
Serve & Enjoy: Serve with rocket, GF precinct toast or add to your salad with 1/4 avocado.
Optional to drizzle of mingle BBQ sauce for extra flavour!
