Hearty green curry

Hearty, tasty & packed with nutrients!

Ingredients

  • Mekhala organic green curry paste (from Woolworths, check in the health food section)

  • 400ml coconut milk

  • 500g Protein of choice (diced chicken / tofu / tempeh / prawns / firm white fish)

  • 2tsps grated ginger

  • Vegetables (choose min 3: broccoli, broccolini, zucchini, eggplant, bok choy or mushrooms)

  • Fresh lime to taste

  • Coriander

  • Serve with cauliflower rice (can buy frozen) for low carb option or with boiled rice

Method

  1. Heat half of the coconut milk in a pot or wok until it thickens

  2. Stir through 1 heaped tbsp green curry paste

  3. Add chopped chicken and stir for a couple of minutes

  4. Add remaining coconut milk and stir well

  5. Cook chicken for about 5 -10 minutes then add in chopped vegetables

  6. Cover with lid until chicken cooked through

  7. Serve with rice, fresh lime and coriander, enjoy!
