Homemade bolognese sauce

This is a family favourite full of flavour and nourishment.

Depending on how many you are feeding you can double the recipe and have some in the freezer for the following week.

Ingredients

  •  1 x onion chopped

  • 2 x garlic chopped

  • 1 x zucchini grated

  • 1 x carrot grated

  • Handful of mushrooms sliced  

  • 800g Beef mince (or chicken, turkey or 2 x can lentils for vegetarian option)

  • 1 x 700g bottle of mutti (or 2 x can of chopped tomatoes)

  • 1-2tsps Italian herb mix

  • 2tbsp olive oil

  • Salt & pepper to taste

 

To serve

  • Pasta or for a low carb alternative zucchini noodle

  • Broccolini, silver beet or spinach for extra greens and fibre

 

Method

1.     Pre-heat pan and add olive oil, onion and stir through for 1-2 minutes

2.     Add in garlic and pinch of salt for another couple of minutes (don’t let it burn)

3.     Add in mushrooms and continue stirring

4.     Stir through choice of protein

5.     Continue breaking up the meat until browned and just cooked

6.     Stir through zucchini and carrot, add pinch of salt and pepper

7.     Stir through Muti tomato sauce

8.     Season with Italian herb mix

9.     Simmer for 30minutes 

10.  Serve with pasta, zucchini noodles or extra greens!

Usually, I love to serve mine on a bed of spinach or broccolini to increase dietary fibre to support bowel movements and keep you feeling full for longer.
